Zingy smoothie A homemade apple and ginger smoothie to rival all smoothie bars! If you are looking for the best start to your morning without having to leave the house, this is the breakfast drink for you. The zingy ginger will make you feel wide awake and will kick your gut into gear too.

Serves 3-4

Ingredients

Apples - quartered, cored and chopped into chunks

3 handfuls of blueberries

2 tbsp lemon juice

2cm fresh ginger, peeled and thickly sliced

400ml pint chilled apple juice

Method

1. Chop the crunchy apple into bite size chunks and the peeled ginger in to thick slices.

2. Place in to your food processor and add the blueberries which may be small but they’re hailed a superfood, bursting with fibre and lots of vitamins – especially vitamins C and K.

3. Whiz until smooth and if it is looking a little thick for your liking add a little extra apple juice. Easy.
