Gut lovin’ boston baked beans on toast Did you know Boston is in fact nicknamed Beantown? It means they know how to do baked beans right. And this Boston vibe brekkie is perfect if you are veggie, flexie or simply looking to spice things up for your gut. The haricot beans are chock-full of fibre and the Genius toast is too – rewarding you with half your daily fibre!

Ingredients

400g tin haricot beans

½ onion - finely chopped

½ red pepper - finely chopped

2 garlic cloves - minced

½ tsp smoked paprika

1 tbsp. brown sugar

1 tbsp. tomato puree

100g passata

2 tbps. chipotle sauce

2 slices of Genius bread

1 tbsp. extra virgin olive oil

Method

1. First, grab a saucepan, drizzle in some oil and crank up the heat.

2. When the oil is piping hot, turn down the temp a notch and add the onion and garlic. Cook until the onions are soft and translucent – but make sure they don’t burn!

3. Add the tomato purée, paprika, brown sugar, beans and passata. Cook until it’s all heated through and thickening up a storm. This will probably take about 5 minutes or so.

4. Season to taste with salt and pepper and ladle onto slices of Genius toast. A yankee-tastic gut lovin’ brunch!
