Simple Homemade Baked Falafel Pitta These simple homemade falafels are fresh and packed full of flavour. Enjoy them warm in a soft Gluten Free Pitta for the perfect vegan bite.

Ingredients

Falafel:

2 tins chickpeas, drained of all liquid and patted dry

Large handful coriander or parsley (stalks removed)

1/2 teaspoon ground cumin

1 teaspoon ground coriander

Large pinch sea salt flakes

Black pepper

2-3 tablespoons chickpea (gram) flour

 

Additional Ingredients:

Salad of choice

Pomegranate seeds (optional)

200g yogurt (or vegan yogurt alternative)

1 tsp mixed dried herbs

Dash of lemon juice

 

Method
  1. First heat the oven to 200c
  2. Next take all falafel ingredients and blitz in a blender. Add more gram flour if mix is too wet. You want it thick enough to shape
  3. Shape into balls and leave for an hour or so to firm up
  4. Place falafel on a non-stick baking sheet, drizzle with a little oil and bake 10-15 minutes until crunchy and browned on the outside (turning halfway through)
  5. Whilst the falafel is cooking, take your yogurt, add 1 tsp mixed dried herbs and a splash of lemon juice and mix well
  6. Serve with Genius Pittas, salad and herby yogurt sauce
