Genius Artisan Loaf

40g sugar snap peas

80g butter beans

3 tbsp sweetcorn, tinned in water

1/3 red onion, thinly sliced

2 handfuls spinach

70g tuna (cans in spring water)

For the dressing:

1 sprig Dill, chopped

½ clove Garlic, crushed

2 tsp Extra Virgin Olive Oil

Small handful parsley, chopped

1 tbsp white wine vinegar


1. Slice up a couple slices of your artisan loaf, or other favourite Genius gluten free bread.

2. Mix up all the nutritious sandwich filling ingredients and then whisk the punchy dressing ingredients together.

3. Using a slice of the artisan loaf as a base, dollop on the tasty tuna and bean mix and slosh on the dressing. Top with another slice of the bread, or keep as an open sandwich and get stuck in. If you prefer your bread toasted then we can confirm that this is equally as scrumptious.
