Vegan beetroot and black bean wrap The colours in this hearty lunchtime snack will have you wanting it time and time again. The black beans deliver a fibre hit and when combined with plenty of veggies and our popular gluten free vegan Beetroot Wraps your eyes, taste buds and most importantly your gut will love it!

Ingredients

100g black beans, drained (1/4 can)

1 spring onion, sliced

1 tomato, cut into small chunks

½ avocado, cut into strips

1 Genius beetroot wrap

1 small carrot, grated

Spinach, 1 handful

1 tbsp lemon juice

Pinch chilli flakes (optional)

Method

1. Roughly smash the black beans in a bowl with a fork and stir through the spring onions, sweet tomatoes and chilli flakes.

2. Separately mash the avocado with the lemon juice until smooth and creamy.

3. Lay out your gluten free vibrant beetroot wrap and admire the colour of it! Then spoon on the lemon-kissed avocado, followed by the fibre-bursting black bean mixture. Add some spinach and crunchy raw carrot for some more gut goodness. Roll and up and enjoy!
